Mages such as witches, wizards, etc are at the top of my list. They're always fun and I fully admit to having a witch fetish.
Then it's ranged dudes with guns, bows or crossbows, sharpshooter type nerds. I always found them really cool and kind of my go-to class if I ever play a dude.
Then it's berserkers and other lightly armored, fast paced dudes. These are just fun in my eyes.

First playthrough is usually a paladin, who when he is not slaying demons and bringing forth the word of god, he is amassing a harem of every romance option the game offers until being forced to choose one at the end. So basically, my favorite class is hypocrite.

ever since I saw vivi set steiner's sword on fire in FF9, I knew that spellswords were awesome, so I always pick those. It's never really good though; most games don't bother to combine the spellcasting with martial combat in any meaningful way, so you just become "sword guy who can fireball" or "wizard who can stab people".

magic user. I used to hate mage classes when I was younger but I've really grown to like them a lot. Seems like most games with caster/mages/wizards/etc. give those classes the most combat options and utility as well as big damage. Sucks getting one shotted by a dude with a stick though. Early levels are always rough too. Always worth it in the end if you stick it out though. One of my favorites was unironically Fire/Poison Mage in Maplestory because it's such a cool combo.
