Oh I have one. Whats a safe way to combo on block I keep getting in trouble when attacking a blocking opponent and end on unsafe moves

You mean blockstrings?
Reverse-beats are the universal example of making blockstrings safe. So let's say you start an offensive with 5B. So as long as you haven't used 5A or 2A, you cancel back into them safely and be safer on block than ending a string with a 5C or in some cases a special.
In Enkidu's case, you can opt to end strings with the likes of 22A, 236A (only the first hit), and 214A if you know that your opponent is really twitchy and likes to mash out at first opportunity. If you wanted to get creative with your attempts to open someone up and end up unsafe, 22C is your go-to option to make yourself immediately safe. You'll be using that a lot.

Ideally, 236BB or 236AB. It travels surprisingly well and nets you a load of damage if you know the combo route after it since it's a havoc only combo.
But for more general purposes, 5B is your standard while you can get a bit creative with delayed hits between 5CC. 5BB is a bit restrictive since you'll only be able to cancel back into 5BBB5CCC and maybe use meter to extend but 5CC with havoc will knock an opponent down and you'll be able to combo after with havoc. 5BBB5CC sort of works to in that sense but the link is a bit tougher to get. You can also try to apply the 5CC havoc with a 5[C] into 5CC since it's one of the few things you can cancel into to make a blocked overhead safe.
TK dive-kick is also pretty easy to fish for counter hits too. Always remember that if you get a havoc confirm, you can fit a 2[C] in there.

I still feel like that reasoning's flawed since at that point you be utilizing normals that are drastically different. Their 5a staggers have different spacing, for instance

If you want to be able to open people up without netplay overheads as Eltnum then you'd be better off learning that as Eltnum. Ditch the 6Bs and 66Cs for a bit and work them back in once you're more confident in your basic frametrap/throw game.

That's not a fair comparison considering Eltnum has probably the best 2B in the game
