Rhea is in the middle of degeneration, she starts to show signs of it back when she killed Nemesis, which calmed her process
her degeneration has a peak point, that is the holy tomb. when Byleth sits in the altar, Rhea realises she fails to bring back her mother to life, in which she starts to balance between degeneration and acceptance, after the flame emperor is defeated you can see in both situations that Rhea acts out of her calm and composed self, its during the war against the empire that she comes to pick a side to her self, knowing that despite not having her mother around, the professor decided to stay with her, she doesnt degenerate and simply accepts that her mother is gone, she gets captured and awaits to be saved
picking Edelgard's side, she comes to see Byleth as a failure and someone who she put so much trust in to betray her, not to mention that shes fully aware he carries her mother with him, the betrayal resulting in the degeneration to take effect, and you can see by the way she acts like a lunatic, even going as far as bringing back her old Seiros self

FE7 is also a great start. For a first time player it has a tutorial mode which explains the basics that are used in almost every FE, but the tutorial maps themselves are actually pretty fun. the later maps can be challenging even on normal mode in a good way. I started with FE7 and it prepared me pretty well for the rest of the games.
