if you into playing a bit older games, all heroes of might & magic games can easly be played one handed. guess civ if you into startegy / building empires

That makes it harder. Pure platformers such as n++. Dwarf Fortress, but you'll be slow with designations.
You could also probably play Stardew Valley, but interacting with things might get annoying.

Age of Decadence, Grim Fandango, Baba is You, and Sam and Max Hit the Road shouldn't be too hard to play. At worst you'd be inconvenienced with a lot of left-handed clicking if you're not used to left-handed mouse control

at low levels yes, but at some point you'll want to be in three places at once, controlling seven groups of units at once, while producing shit at home base. this is where keyboard macros for unit selection and camera position become absolutely necessary.

Dungeon crawlers. You'll have more luck with the anime dungeon crawlers, though, since they're designed to be played with controller from the start. I'm pretty sure Labyrinth of Refrain and Stranger of Sword City will remap to pure keyboard input pretty easily.
