Vincent ending up with C in a committed relationship doesn't 'kill' the entire point of the story. In that ending, both of those characters but most importantly, the protagonist Vincent experiences some type of growth.
An ending which wouldn't have made any sense would be if Vincent ended up with K in her new ending when she started a free life since it would have given Vincent exactly what he wanted at the start of the story: retaining his freedom and staying with K, keeping things the same.
At least in the new C ending, Vincent undergoes some positive growth along with Catherine.
