Level scaling allows 100% of the game's content to offer you a challenge as you come across it instead of much of it becoming pointless to take on due to being literally below you before you even get there. Level scaling is the best means of making the entire game worth exploring in a single run.
Every RPG without a dynamic scaling system is often some linear path that is hand-tailored to scale with what level it would expect of you at certain points.

The real problem is that Level Up systems that scale up arbitrary numerical values are inherently trash.

And even when it's done properly (by replacing enemy types with stronger ones) it still detracts from the satisfaction of having progressed enough to see your enemies driven before you, as the saying goes.
It takes you just as much to whack an enemy as it did when you first started, you just create some nifty-looking sparkles while doing so.

proper level scaling is introducing new mobs/quests as you gain strength while not removing the old ones and having a very obvious curve where you start to kill things faster before new mobs are introduced. for example

>hit level 2
>level 1 rat now takes 5 seconds to kill
>hit level 3
>level 1 rat now takes 3 seconds to kill, level 3 enemies are now introduced and they take 10 seconds to kill
>repeat
you still get the satisfaction of increasing your strength but never so much so that the game becomes trivial and never to the point where you feel no new challenges will come your way

Even Skyrim does level scaling better, allowing you to grow in power past the vast majority of creatures in the game with some exceptional cases, such as bosses.

Challenge is desirable, but above all it's an RPG. There should be creatures stronger than you and creatures weaker than you, and you should be able to overcome the strong creatures by training your attributes rather than scaling everything to your current power. There's no way to justify the bullshit level scaling, user. It's irreedemable.

It's bad because they not only scale so closely to your level, but ideal character leveling is so ass backwards as well that fucking up your leveling is going to screw you over in the long term. Shit like OOO and Fran's were very popular mods for a reason, on top of alternate leveling mods or those that guarantee 3x +5 stat allocations per level.

Ironically it's easier to stay at Level 1 the entire time, doing the Mages Guild questline to spellcraft up a Drain 100pts 1s spell to instantly kill or at least finish off most NPCs and creatures in the game, and for very low magicka cost at that. Plus the DB questline can be triggered by just doing that one dream quest to get around the leveling up part.
