Or if you are fine with learning by YouTube tutorials, start with tekken 7,
it's very active and it's a legacy game, meaning that while you play tekken 7 you're also practicing for tekken 8.

I've had some expierience with garou mark of the wolves, marvel vs Capcom 2, and mace the dark age, haven't really picked up anything else though.

Really though it comes down to which one you like, but my one recommendation is to not “main” a game that is from a franchise with inconsistent releases and small communities like MK, injustice, DBZ or Persona. Instead pick one of the bigger ones like SF, MvC, Tekken and BB to name a few to learn basics on and stick to 1-2 characters you like and learn them inside and out. Then you have a foundation and can play whatever you like.

You should be fine playing with a controller or keyboard.
Unless you want to be in the top 0.01% of players, in that case a stick might be a good investment in order to do very precise movement.
It's just preference at the end of the day.
