Karl Jobst does good research into speedruns, mostly fpses like goldeneye, perfect dark or doom.

Super Eyepatch Wolf comes to mind

Pannenkoek dissects Mario 64 in stunning detail. His Watch For Rolling Rocks video is incredibly funny, informative and interesting.

I dont know about channels, but there is a 2 part documentary about sega, the dreamcast and developers during that time. Look up: A Dream Cast.

Another one is the FF XIV documentary. Shows how they went from 1.0 to ARR. Such a great idea how they ended 1.0 and into ARR. I dont even like mmos and that was a really good watch. I forget the name though.

If you like looking at the development and history of games then the GVMER channel has plenty of videos on that sort of stuff. Their narrator is also bretty good.

Summoning Salt is a top tier Youtuber who's only real flaw is he uses like the same 5 background tracks in all his videos.

Digital Foundry's my personal favorite, especially if you have multiple platforms and you're trying to weigh which version of a game is the best one.

His sense of humor is AWFUL, his stylization of his videos is irritatingly unnecessary, but NO ONE does a better job of putting the experience of playing a video game into words. Gaming Historian is pretty good, the quality of the videos are well done, informative and the guy doesn't try to be a damn comedian cracking jokes or creating skits.
