I'm looking for similar. Summoning salt really got me into these types of videos
Karl Jobst does good research into speedruns, mostly fpses like goldeneye, perfect dark or doom.
Super Eyepatch Wolf comes to mind
Pannenkoek dissects Mario 64 in stunning detail. His Watch For Rolling Rocks video is incredibly funny, informative and interesting.

You might like this dude. His insights on texturework is amazing and he's pretty passionate about it.
GDC's channel has some great talks about the tech behind a lot of games
AccursedFarms Game Dungeon series is pretty nice if you like trivia and history about the niche and bizarre games
Videochats are okay too if you don’t mind a crazy and moldy Jesus Christ staring you down
strafefox
This channel is criminally under-subscribed. The production value is incredible and the videos give great "how it's made" insights.
