I unironically think Ubisoft was a good developer until AC Unity. Granted, their games never offered much gameplay depth but I don't think they ever wanted to. Their games were simple, but fun. They also excelled at animations and general visual design of their characters. For example, look how Sam Fisher holds his gun when crouching behind cover in Blacklist. It doesn't make sense, good luck shooting straight after holding a gun like that for two minutes. The way he crouches to sneak would fucking kill his back. But it looks fucking badass. Same with how Altair walked. Nobody walks like that but it makes you feel like the character is one badass dude. Gameplay wise, sure, there are deeper systems, but Ubisoft's games weren't bad either. Their open worlds look great, if they added more varied activities to them and made finding them more natural as opposed to a million map markers, they would easily be the best open world game designer. That is, until they started going downhill with Unity and reaching the absolute bottom with Origins.

Ubisoft hasn't been a good company since the very first AC. Any good games they've made since then they'v done so by complete accident or because the game was deemed dead on arrival and they gave the devs free leeway, which whoda thunk it is what spawns good games in the first place.

Who are you trying to impress? Disliking AC isn't a contrarian opinion, I'd even argue that you're the contrarian for thinking they're very good since most people are either ambivalent or dislike them outside of Brotherhood and Black Flag.
I hate AC, not because the game itself is hatable, but because it marked the death of a company that made plenty of entertaining jank. AC is mediocre at best, and Black Flag is just a worse version of that one Pirates of the Caribbean RPG PC game they made in the early 2000s.

By the time 360 gen came around they had to scale their studios and that meant larger teams with a lot of barely competent and useful diversity hires, that combined with needing a calendar of yearly sequels to please the investors meant soulless formula and marketing strategies prioritized over actual game quality, AAA is a cancer, it's a miracle Rockstar still manages to keep its soul

Rainbow six vegas 1 is one of my personal favorites. Highly recommended. I hardly played 2 so I cant say much.
I played Vegas 1 when it came out and it was already casual watered down crap. The tactical genre is so dead that it looks good by default of having no competition.
AC1: Interesting premise bogged down by clunky gameplay.
AC2: Main story picks up speed and Ezio turns out to be a solid protag.
AC3: Modern storyline sucks, 1776 storyline sucks, gameplay sucks, but at least the battleship segments were fun.
AC4: Let's just make the whole game out of the battleship segments from AC3.
ACU: Well, that was fucking awful.
ACS: Two fun MC's stuck in a dull story.
ACO: Ok Egyptian story, ok combat, shit modern day story.
ACOD: Microtransactions.

Cause i didnt buy and wanted to see what has the best of the AC series has to offer. I did give it a fair chance and finished it, but it made me never want to try neither the previous AC's or the ones that came after. Was hugely dissapointed.
As pirating and shipping concerned it was very restrictive, shallow and immersion braking. The only challenging part that had genuine satisfaction was fighting the legendary ships.
Swinging from one boat to another and jumping off the mast was fun for quite a while, but it can't really carry the rest 90% of the pirating experience thats dissapointing.

-Right of the bat your level 1 ship canon balls shoot mini-nukes that obliderate a fort built for defending against ships - thought it was a bug the first time.

-loot is meaningless
-ship leveling is superficial and feels tacked on, like its some cheap mobile game where you have to aproximately match your level to enemy level to stand a chance
-3 minigames to take over a ship

Other genuine experiences with pirating were literally bugs, like a manowar getting stuck in a small island stream - unexpected thus intriguing and creative to the imagination, too bad the actual game was too shallow to have these sort of encounters as per design.
Other thing that made me excited after a whole lot of AC black flag dullness was jumping onto an enemy ship without triggering the battle sequence or AI getting getting alert in any way. I hung to the side of the boat about to go on an adventure of imagination, who cares if i died or had to reload, its something that will break the monotony - NOPE "GET BACK TO YOUR BOAT OR WE'LL HAVE TO RESTART FROM CHECKPOINT!" Ubisoft angrily proclaimed. No fun allowed.
Not to mention what limited player agency there is in general in the game, faux rpg elements and other tripe. What a waste of assets.

All kind of games. I look for engagement that doesn't leave me feeling like im being exploited of my time. This seems to be a staple of many Ubisoft open world games and others that try to copy them. Having good visuals won't make a game any good if its not engaging, and isn't challenging you to think somewhat and have your decisions somewhat pay off, not necessarily by design, but by emergent gameplay in some way. Ubisoft open world games felt controling and restrictive more than usual. For instance in Watch Dogs, in a chase a button pops up that you have to press to hack thing. That quick time even lingers for way too long, you can be past the intersection and it will still be up there. Not only that, its not dynamic, meaning that pressing the button wont change the environment that would inconvenience the chasers, but its literally a rubberbanding cutscene where the chasers are just glued to quick time outplay. There is no thought or consequence, or skill involved. What if instead of that you needed to time your button press, before going into the intersection, what if after pressing the button it would take 2 seconds to activate it, and thats the time window you'd have to shoot for for best effect. Atleast it would be somewhat engaging. Its just a plague on ubisoft games, its like they fear to involve the player in the game, scared to make them uncomfortable through consequences of gameplay, so they take that power away. Want to shoot a civilian in far cry 3? Nope won't let you aim your gun at them, stab someone in far cry 3, or get of your boat not at port? Nope. etc. I honestly felt like i was playing a cheap mobile game, dressed as a AAA title, it was so basic.

Haven't played Beyond good and evil, heard good things about it.
Loved the 3 first Splinter Cell games, i havent played any after that so can't comment. But the first ones had good creative gameplay with many options to interact with the enemies or the environment.
Far Cry 2 had great immersive visual presentation and gunplay, but the overall mission design and navigation were repetitive and tedious and dragged the game down.
