III, IV, V are all fine places to start if you want you want to stay retro. I wouldn't recommend the NES version of III, the SNES/GBC are essentially the same and are really good. The DS remakes of IV and V good although physical versions are becoming hard to find. The phone versions are acceptable substitutes and it's actually the superior version of IV since it had the party chat the was left out of the DS version.
VII is the way to go post SNES, 3DS boasts more content, two extra characters, and QoL improvements, but the PS2 version looks better, has a better soundtrack and, personally I like the tougher difficulty, they're both good, but the 3DS version is probably better for most people.
