Any Nord by this point would be absolutely furious with the Empire and the Dominion. You have to consider that in TES, what the people believe to be true directly influences reality. Banning the worship of Talos could hypothetically kill him, if you could successfully suppress all worship of him. No true Nord would accept this. When Ulfric shouted Torygg into smithereens, he essentially highlighted how weak and neglected Skyrim had become under Imperial control. Just look at how run-down and ruined most of the "great" cities are, and you'll see he's not exactly wrong. The Nords have been on the decline for a while now, the Talos ban was the final straw that lead to the Stormcloak backlash.

Because they offer pretty tangible effects if you worship hard enough and are competent though to further their cause. Whether these tangible effects are good or bad vary. Worshiping the Divines usually doesn’t do much either way, and the reason behind this is not very well known amongst the general populace of Tamriel.

But generally Daedra worship is a bad idea unless you’re already powerful or you’re desperate as hell. Or unless it’s already integrated into the culture and all of your worship just becomes background noise for the Daedric Prince in question.

After the Oblivion Crisis, the Empire was in a state of complete disarray. The Thalmor, who were once nothing more than a minor political faction, took credit for stopping the Daedric Invasion. They then began a long isolation from the rest of Tamriel as a way to "clean house" before making any moves. This means little internal strife.

Next, they managed to seize Valenwood and Elsweyr by installing a puppet state for the Bosmer and deceiving the Khajiit into thinking the Void Nights were ended through their magics. With Boser archers and Khajiit warriors their armed forces were now much stronger.

The Empire did not get straight to reorganization right out of the gate. Without an heir to the throne, most of Cyrodill was wrapped up in the bickering of the Elder Council and the claims of various petty lords to be Emperor. So the Empire had it's thumbs up its ass for a long time doing nothing.

Soon after, Black Marsh pretty much declares independence and seizes a huge chunck of Morrowind before being stoppped. Then Red Mountain erupts, destroying Vvardenfell and devastating the rest of the province which leaves the Dunmer scattered, demoralised and leaderless. So the Dark Elves and Argonians are out of the picture dealing with that shit, no threat to anyone.

Finally, just before the Thalmor began their invasion they systematically exterminated all of the Blades in Summerset and Valenwood, so there was no prior warning from Imperial Intelligence. Add to this the secret movement of the High Elven army much closer to Cyrodill via hidden camps and thus the Legions had next to no time to prepare.

I'm amazed the Empire even survived, much less counterattacked as spectacularly as they did in Red Ring.

It wasn't Altmer vs the whole of Tamriel. The Aldmeri Dominion is now bigger than the empire. AD includes Alinor, Elsweyr and Valenwood. They beheaded all of the Blades in these regions and stirred up an uprising. They also got the Khajiit on their side by pretending they brought back their moons.
Morrowind wasn't part of the Empire anymore once they got hit by the Ministry of Truth and lava'd by the Red Mountain. They also got sacked by Argonias who likewise seceded from the empire.

So now you have Alinor, Elsweyr and Valenwood versus Hammerfell, High Rock, Skyrim and Cyrodiil which was not only torn by the civil war for the throne but they were still suffering from the oblivion invasion since they were hit the strongest. So the AD managed to capture the Imperial City temporarily but got pushed out later in the Battle of the Red Ring. After this they tried to conquer Hammerfell but got pushed out as well. However Hammerfell left the Empire in the process, further weakening it.

So now you have a ravaged Cyrodiil, unable to fight after the Red Ring, Skyrim torn from the civil war and who fucking cares about High Rock versus the Aldmeri Dominion.
If the Stormcloaks win not only will the Empire lose Skyrim, they will lose High Rock too since they'll be cut off from both borders.
