Jrpgs with role-playing...do they exist?

So you're telling me that in the 30+ years the jrpg genre has existed, and the thousands of jrpgs that have been released, nobody has bothered to make one with actual role-playing? it never occured to a single Japanese developer to make say, a thief actually capable of doing thief-like things?

Role playing isn't possible in video games outside of text based. And even in text based they're not possible. You will forever be limited because a video games has limits. If you want to role play, go play DnD with somebody as you clearly don't have friends.
