Surveys show Rogue might not be as overpopulated as you think.
Warlock is typically a good choice. Versatile, decent utility.

Warrior is decent but shouldn't be your first char, they suck arse at farming gold.
Shamans who refuse to heal suck arse. Even as Enhancement a chain heal or healing wave will cover for healers who are busy drinking.

I dont mind throwing healing totems here and there I just dont want to spec resto, so if thats an option thats fine with me. I havent done much research into the spec trees yet I just love the aesthetic and ele spells

Ele shaman = Oom shaman. It's great in PvP but for PvE you're gonna feel like a firetruck that's been tasked to put out a fire at a gas station, but the firetruck is out of gas.

Rogue won't be overpopulated because this is 1.12 where they're nerfed
They're also always wanted in raids and 5/10 mans you can just make your own group. Same for warrior except 5/10 mans are easy to do as tank, warriors will be overpopulated though.
Ele shaman is really strong in PvP, but it seems like a waste to play it if you're not gonna PvP.
