The other hand though is even if the Thalmor succeed in unmaking the world and revert the world to the previous kalpa (Mer are genuine aliens from a previous kalpa. It really is a predicament. The Imperials seem like the obvious choice once you have all the information, but the Stormcloaks go to sovngarde even if they are fucking wrong. They go to sovngarde as long as they fought for what they believe in (or something like that).
For me, it's imperial, because I never play a snownigger nord though

What possible reason would they have?
The answer is that it was to their advantage. They were winning in the short term, but in the long term no matter how much they did in Cyrodiil they couldn't fight a protracted and continuing war against the Empire's remaining provinces, eventually they would be worn down.
Meanwhile, the peace was also to the Empire's advantage, or more specifically the advantage of the Emperor and the Cyrodiilic nobility. They didn't want the capital city to be wrecked, didn't want Cyrodiil to be occupied any more, and was entirely willing to sell out the provinces in exchange for that.
That's why it was such a betrayal to the Nords. They willingly fought and bled and died to protect Cyrodiil, under the assumption that the Empire would do the same for them, but they didn't. After the Nords fought and died to protect Cyrodiil from the Thalmor, Cyrodiil made a deal with the Thalmor that allowed them to come and imprison and torture the Nords in Skyrim.
After that, what possible reason does Skyrim have to remain loyal?
The whole point of an Empire is that it protects its subjects, from itself and from its enemies. Mede's Empire at this point is unfit for purpose, and doesn't benefit Skyrim at all, only draws from it.

The game pretty unfairly has the imperials trying to behead you at the beginning of the game, so most normies pick stormcloaks. If you pay attention at all to the previous games the downfall of the Empire is a constant theme. Do I need to remind you all about Wulf in Morrowind? Who quite literally says it's probably time for the Empire to die? Do I need to remind you all of how the Empire are letting the Thalmor plant spies in their provinces, allowing them to buy favor with their wealthy class, control trade? The Empire is not doing anything to combat the Thalmor and the only evidence of the contrary is Tulius' line at the end of the Civil War which I'm more inclined to chock up to a generic line as Ulfric gives the same sentiment if you win for the Stormcloaks.

Previous knowledge of the game's lore lets you understand that The Empire as it was is over. It died with the Septims back in Oblivion. The Empire of Skyrim is an incompetent, rapidly decaying shell.

The First Dominion has been fleshed out to be a lot more Egalitarian, tempered by the control of a far more benevolent leadership in the form of their Monarchy. The Thalmor took control, abolished that monarchy, and stoked racial tensions for Summerset Altmer to new heights under the Third Dominion. Even at their most racially sensitive the High Elves were paternalistic at best and evidence of hatred for other races was already present.

I think I got one. The Altmer don't breed all that much due to their long lifespan. While the White Gold concordant was signed it was to bide time to heal as the empire can and does have more kids at a time. The nords have ruined this plan by causing a rebellion and therefore both them and empire won't have enough time to heal.
