A couple reasons: Goliaths have near-dragoon tier pathfinding, especially in tight spaces, meaning being able to engage guardians without significant losses is difficult. This is especially true because good Zerg players place guardians above hard to reach locations, e.g. behind mineral lines, near bridges. Because in an open space goliaths will beat guardians.

Maybe since Snow was getting so heavy into archons which have barely any hp and lots of shields, he figured it was worth it.
