I think she's a conflicted character, but overall I quite like her.
Firstly, she has had a traumatic upbringing with being experimented upon and having her siblings die. She also has a reduced lifespan ie a literal mid-life crisis, so it is somewhat understandable she would need to take drastic action to achieve her goals. She does overstep quite a few lines, but this puts it into context.
Secondly, she only becomes irredeemably and irrationally evil without the voluntary support of her sensei and classmates. She says herself that if it weren't for the professor joining her, she would probably gone cold-hearted, showing that she couldn't stand against the world alone. I find this an endearing aspect of her. She also really seems to care for her comrades in her supports anyways, so it shows she's more reliant on her human side than she thought.
Thirdly, her ends, but not her means, are justified by many of the other characters. So many supports regard the others struggling with nobility and arranged marriages/ their crests, so her goals of abolishing this are supported thematically. While the other routes accomplish some of this with less warmongering, that is only because Edelgard stirred the pot. Maybe a war was avoidable, but we can't really know.
Still think it's unreasonable of her to expect the professor to join her with all her clandestine plotting, but she admits so herself at least. She thought she could shoulder the responsibility herself, but that's precisely what makes her into a monster on most routes.
All of this can be thrown into the bin since she hires bandits to murder Dimitri and Claude at the start of the game. She is evil through and through and that is before even encountering Blyeth.
I want to play this game so bad, but I can't buy a whole switch just for this.

As for why she was not executed, it's not that complicated. The people Edelgard is aligned with are big into crest experimentation, and since the dragons like her are the sources of these, it'd behoove them to have a source of dragon blood that you can just go and drain some from when you need it rather than killing her once and only getting a bit.
In the route where she's not imprisoned, and I can't believe I need to spell this out for you, we see how Rhea would act if she hadn't been imprisoned. And you can see how much she absolutely does not care about humanity at all. They're pawns to her, and she's willing to sacrifice human beings who trust her without a second thought.

I took sweet my time in my first playthrough exploring the monastery, grinding support levels, and recruiting as many people as possible to an autistic degree and it still only took me almost 60hrs.
In NG+ you can carry over your prof rank and other boost that'll make the game even easier the second time around. If youre only interested in the new timeskip routes/support events/paralogues and skip out the rest(with auto instruct and seminars) then you can possibly do it in 20-ish hours.

Because if Sothis never came to Fodlan then there wouldn't have been any children of the goddess and no crests. And you can say that she should have gone against TWSITD which is logical. But it's probably hard to go against those who experimented on you and probably steered you in the direction they want with manipulation, plus you probably shouldn't show open hostility to those who have actual nukes and 11 zombie corpses with the exact thing you don't want.

But if you already played deers, it recommended to just watch a few cutscenes to save yourself a few dozen hours because they share A LOT of content to the point where you're pretty much just playing it twice.

It might be a 6 year time skip instead of 5 and when you get out with sothis as playable character for some dumb reason like waiting has given her a physical body you will see that TWSITD have taken over fodlan and betrayed Edel so you have to band together with every house(leader) and the church to defeat them.

Because it's a 1.5 exp boost in that stat over training two stats at the same time. You still can rush things, especially if you want certain spells but hitting S rank will take some time and that's where the strong abilities are.

I think if you want to save the best routes for last then you should play Edelgards route first:
