Healthy amount of grind makes you feel like you've earned things. If you just get them automatically it doesn't feel as rewarding. Key word here is "healthy" of course.

Why only single player games?
Grind is even worse when you have to keep up with other people to stay relevant.
Fucking hell trying to play Castlevania HoD online was a pain in the ass if you weren't already maxxed out on speed gear. You'd just fall behind and be useless compared to everyone else who had sonic boots. Good luck getting that far though. You'd need hundreds of thousands of boss chests to even hope to see a pair.

If the grind is tedious and unfun and does not trip any progress/difficulty counters I might cheat whatever grindable resource is instead

Really, the only reason you keep playing a grindy game is to abuse your characters beastly traits in game because it looks cool. Nioh was like that, great combat and general gameplay but very repetitive and few enemies. But because it looks cool while you trounce the AI you kinda forget the repetitiveness.

Define grinding.

I don't need to defend something optional that's purely for completionists. I have never seen a modern game where grinding is required. Anyone saying that grinding is required in 9/10 RPGs simply refuses to employ any sort of strategy and when they don't have the raw stats to bruteforce everything they get upset and blame the game.

It's an easy way to maintain a combo and rack up some extra points into the bargain.
