Unless you want fantasy setting specifically, RDR2 is peak comfy nature sim.

Kingdom Come Deliverance is unironically the best open world game ever if you adore good nature environments. The game itself is just 10/10 kino, great pleb filter. If you have a 2080ti or some shit, my god the game is geourgeous.

Last time I checked woods there were devoid of any life, no birds and barely any animals.

Only when the PC version releases. I get nauseous playing this at 30 fps. I didn't want to explore at all and just went through the storyline. Doesn't help that the open world is filled with Rockstar trademark pointless, immersion breaking collectibles and "otherworldly" event as well as ultra satirical nonsense side quests.
