You'll want to use them all at some point to farm skill points anyway. So try them all and see which ones you like best. Respeccing isn't too tough so experiment.

Build doesn't matter until NG+ or unless you're going onto the DLC.
So use whatever you want and find a weapon you like, the level up menu tells you exactly what your levels will be upgrading.

Remember to learn how to ki pulse and stance switch for the best experience.

I found the spear very useful against groups of enemies. The regular katana is also a very versatile weapon and it became quickly my main one. Dual swords were also quite good.

Also, I found onmyo magic pretty useful. Magic projectiles deal damage and altered states even when the enemy is blocking, and can also give you advantages. There is a magic spell that lowers the enemy defense a lot, and it's very useful for boss fights. You can even combine it with another spell that makes the enemy move in slow-motion for a while to destroy whatever foe you encounter effortlessly
