I always try rogues but it always turns out they are shit. Both in rpgs and mmorpgs they are so squishy but I love being able to play as stealthy character. Then I quickly regret choosing this class and I don't know what else to pick.

that's complete bullshit. There was always skill checks by the NPC in charge before advancing your rank. I don't remember what it was like in Telvanni but I think they had that system in place as well.

you don't get it. what does a trainer have you do realistically speaking? he makes you cast those spells. so that whole notion about not having to know magic in MW is wrong. you casted enough fucking spells in your virtual life if they make you head of the mage factions, hence the skill checks. the whole system is not comparable to Skyrim's Winterhold College in any way. In Skyrim your progress with the college was based around narration and in Morrowind it's actually both, missions+skill. so it's a false analogy and you know that.

True, but at least in Daggerfall and Morrowind you needed to be proficient in a guild's skills to reach the higher ranks.
Would have been better if the quests were designed so you actually need to use them to succeed (Daggerfall had this in one or two of the random mages guild quests where the objective is to cast a premade spell, but with the nature of its quest system you could realistically reach max rank without ever being offered them in the first place and can just refuse with no penalty if you are) but something is better than nothing.

In a typical playthrough you're going to spend a majority of the time with most of the skills in the game at low or minimum values, and if you made it your goal to get by solely with training you'd need to find and hunt down the master trainer of one of the skills for each faction and will need the governing attributes of them be high enough to be able to train each one. It takes a lot more to "do everything" thanks to those limits as opposed to just waltzing in and following the side stories of four or five guilds right from the start with everything tuned to be achievable by your fresh character.
