Usually it's more like concepts that grow into races. Like Tolkien orcs are the idea of utter corruption, one that you can't return from when even characters like Gollum could return to the light, and more thematically appropriate features are added upon them. Usually physical traits are due to the author's prejudice, like Tolkien making his Orcs squat, bow-legged and sallow because he likely wasn't fond of SE Asians.

Anything Orcs do, regular human barbarians usually do just as well if not better. Orcs typically get forced to have a bunch of stupid societal rules that aren't applicable to have a "muh honor" system when they get developed in attempt to make them seem more bizarre or in order to subvert expectations.
The only good Orc creation off the top of my head are 40k Orks because they're a legitimately alien race and their method of reproduction and kultur makes them totally incompatible with human cohabitation while being fairly understandable and even admirable in a weird way.
