You can find her in any forest.
You can always get Yuffie, you didn't miss her.

Vincent is in Nibelheim, Cloud and Tifa’s hometown. Contrary to what the other user said, you can always go back and get him.

Yuffie can't be missed, unlike vincent.
Get Vincent, his limit breaks suck but he's one of (if not the best) magic user.

You can get the full Yuffie experience at any point before disc 2. You can get Yuffie at any point before the end of the game.
Vincent and Barret are also both capable of insta-killing just about anything later in the game after acquiring their final weapons due to how the damage is calculated.

Battle items are pretty useless afair unless if you want to just throw some out there. The absolute best materia in the game is Enemy Skill if you can get the right Enemy Skills (big guard, beta, white wind).

Is it easy to accomplish or does it require a million hours of grinding to accomplish?
Give Sources to anyone in your main party -- you can farm them mid- or late-game pretty easily with Yuffie's Conformer weapon and the Morph materia.

Enemy skills make ff7 super easy. I beat it for the first time last night and I used a big guard + regen combo for over half the game and bosses could barely touch me.

Barret's damage is based off of AP earned, which can be a rather long process.
Vincent's is from his enemy kills, and is a bit more manageable. Just give him an area with high encounters, several enemies per fight, and fire some all-target attacks.

Sounds like you belong on re**it. Go there, you'll get more legit help there.
Darker green and raised off the ground. Cloud will sorta swim through them on the overworld.
Then hold off on using the stat boosts. They don't impact things much as single points, but, later, when you can drop 50 and not worry, you'll see a difference.

See the little circles on the "materia" screen? Put them into those. If there's a small grey line between them then you can "link" the materia. A very useful combination is "All" + "Restore" which allows you to heal your entire party with one move.
Different weapons have different materia slots, some have as little as 2, and some have as many as 8.
Most materia you'll come across aren't super useful (my advice is to avoid any elemental materias except lightning).
Blue materia are useful for linking with others (all, counter, etc)
Red materia are summons, very powerful attacks that require a lot of MP (most of the early ones aren't that good so don't worry about them)
Yellow materia is more basic but special functions. The yellow materia "enemy skill" allows you to take certain enemy specials and use them yourself (Get big guard asap, insanely useful for the rest of the game)

Whatever you like. Ff7 isn't a hard ff (or hard rpg in general) so any team is viable. I used Cloud/Barret/Cid and got through the game just fine.

Active means even when you're in the item screen enemies can still attack you

It seems daunting at first but keep at it. The more you play the game the more the mechanics will click, and by the end you'll be combining materia for certain situations no problem.

the environments in ff7 are so objectively shitty the game itself even has an option to show you what is actually interactable on the blurry jpeg you're walking on

Certain enemies will use their "special attack" on you. It has the same text in the red bar at the top of the screen you'd see with a limit break.
Just make sure that attack hits the character holding the enemy skill materia, and that character will learn the skill.
Now the skill is only attached to that materia, so if you get another enemy skill materia later on, you'll have to hunt down that enemy and get them to use that attack on you again.
A VERY easy way to do this, is get the "manipulate" materia, which you get for free once you get a certain character.
The manipulate materia allows you to control an enemy for 1 turn, so a very common method is find the enemy with the skill you want, use manipulate on them and make them use the "special attack" on the character you want.

Clarifying a bit more,
The enemy skill is attached to that specific materia.
So let's say I put a enemy skill materia that knew "Big Guard" (I'll just call it bgm for short), on Cloud. Cloud can now use bgm. But if I moved that same materia over to Barret, barret now has the ability to use Big Guard, while Cloud can't since he no longer has that materia.
Think of it like an attack (or set of attacks) you can move from character to character using a materia.
