There's 2 Square Enix Christmas albums, some have old remixes, but there some new stuff like a Yuzo Koshiro edit of Rydia's theme youtube.com/watch?v=89wGoEH2C7Q
Make it sweet is my favorite way to listen the UmJammer Lammy
Anyone have the DLs for the Nintendo Big Band albums? I think I have the 2014 one but that's it.

Nier (both titles) have a bunch of great arrange albums. Okami has excellent piano and jazz albums. This (french) website is a decent resource to find some of these
This is from a DR arrange album from Takada and Jun Fukuda, with the general idea being 'chiptune opening to full arrangement.' I chose this one because I feel it just gets better as it goes. youtube.com/watch?v=7NV_pkoFV90
This is a remix of Metal Man's theme (with some others) off the Mega Rock Carnival doujin album by none other than Shade (the Sengoku Rance musician): youtube.com/watch?v=c0lk7Atmn0s Arguably the least obscure of the three but still cool, the Stardust Speedway (US) mix by Senoue and Cash Cash from the Sonic CD OST anniversary release: youtube.com/watch?v=qaokGPDm52s

The Dracula Perfect Selection album is enjoyable both ironically and unironically, totally depending on whether you're listening to the vocal tracks or the instrumental tracks. >youtu.be/ar_f_o3nuQ4 For a more serious answer, the Virtual Sonic album would probably be my favorite, even if "Knucklesmania" is probably the only track on it that's an actual remix (and not just taken from the Sonic CD US/Spinball album >youtu.be/ot7FD8Vf0rk >youtu.be/fDnQMmmscfQ >youtu.be/vwsx8gqVOYc Yes, that is SRB2's theme in the last one.
