You can't. They hide away and are almost always guaranteed to be manipulative sociopaths when you get to know them.

Make it take a turn or two to remount, make it something you have to at least think about for in terms of consequences so that mounting is dine in situations where the player feels only fully comfortable in doing so.

They will gain skill points faster in that area as shown by the arrows in the instruction section so just spam those until they start getting settled into a comfortable role. Classes are unlocked based on what skills you’ve leveled up. If you want a new class, just level up that skill.
