Despite being simple they are very distinct looking. Toriyama's style really shines through.

FFVII's enemies are so underappreciated. They have such a primative, silly, and unsettling feel to them. It's so interesting to me just how bizarre they are.

Great silhouettes, which make the monsters distinct and recognizable. Toriyama also manages to balance intimidating and charming very well in his designs.
I saw here a few month ago that dev for DQ1 originally gave Toriyama design for Wizardry as inspiration, and there's an artbook comparing the two that an user posted here, someone know what I'm talking about ?

It's really amazing how adorable such a simple design can be and how absurdly popular it is. I sometimes wonder, had DQ never existed, would a design like this be accepted nowadays and would it get the same amount of traction.
It really depends. Knowing how the Internet works, there's two routes. Either the Slime design would be accepted immediately, get tons of fanart and the inevitable porn. Or it would be ridiculed to hell and back, then people would start ironically liking it, then people will like it fully. THEN the porn will start popping up.
Oswald is actually an interesting comparison. Only reason why we have Mickey Mouse in all of its corporate horror is just because Walt lost the rights to him which forced him to create the mouse, even though it could've been as popular as Mickey is now. I guess part of it is just marketing. See what people latch on to and market the hell out of it.
Or how out of all the Pokemon, Pikachu was the one people found most endearing.
Bottom line, get a good artist for your games. Part of Hollow Knight's massive success also came from very simple but endearing designs.

It's not despite how simple they are, it's because of it. So many fantasy artists come up with a huge origin story and history for all their characters, which is great, but then try to represent every element of that story in the design, so it ends up as an overdesigned mess. DQ enemies are pretty straightforward. You take one look at them and know pretty much everything you need to.
Complex, intricate character designs do have their place, but generic enemies and NPCs are not that place.
I think the real question is why they didn't have containment fail and make you fight your way out of that room.
They haven't shown any of the weird enemies so far in remake footage/screenshots, have they? I hope they don't try to tone them down.

Galleom is pretty great, and I did get a burst of nostalgia seeing him pop up in Ultimate, but I had really hoped Duon would make a return at some point. Fighting him was just so fun.

Monster robots in DQ are made via magic and don't actually function like robots do. They behave like robots and work based on how people think robots work, but they're mostly hollow inside. Also they have souls, and all monsters can become friendly, and even transform into humans with enough effort.
It's a bit odd.
