The knight didn't need proteccion. He wanted the potion, even if it took his life, to protect the ones dear to him, like a honorable knight would.

Some battles are more important than death. I wouldn't expect you to understand this if you have no respect for knights.

A knight would not live one second upon imbibing a potion that could kill a dragon. He would die flailing ineffectually, unable to protect anybody.

The knight knew the potion would kill him in the end but it would have given him the edge he needed in the upcoming battle. He was willing to sacrifice himself for the safety of the kingdom. The potion seller had no right to refuse the knight service.
