Depends on how good the character creator is honestly. If there is none, I usually do both at some point in no particular order.

I never played many games growing up where I got to create my own character, but when I did, I almost never liked the build options for guys (for one reason or another), but I could usually manage to make a cute girl who appealed to my sense of aesthetics, so I started sticking with female characters.

Nowadays options are much more robust and you can make pretty much whatever you want but I still tend towards picking girls out of habit.

I play 95% men and 5% women. Depends on what the game offers and the type of game. If it's an RPG, I always go male as I have no idea what it's like to be a woman, I can't really put myself in their shoes or think like them, so I can only identify with them on a very shallow surface level (as with all men). And of course, a man pretending to be a woman is just absurd.

In most games that gives you a choice it makes more sense for men to be the main character anyway, and men tend to cut a more impressive figure in uniforms or armour. In nearly all regards, choosing a man tends to be the superior option.
