Will this run well on a laptop with a Ryzen 7 2700U? I've been able to play games at 4x resolution on my desktop with an i5 4460
I'm going abroad for a year and I realize I won't be able to play modern stuff on the laptop since it doesn't have a dedicated GPU, so I was thinking of stocking up on emulators

You should stock up on emulators anyway.
Easily run everything up through the dreamcast and GC. I dunno about PCSX2.
But being away for a year you can pretty much play whatever you want on your laptop if it's from a console from that era. NES/Genesis/SNES entire libraries will even fit on a flash drive and shit now,
