The center became far less important since about the Atlas Rises update. You can get there still if you want to reach a new galaxy, but that's all it's really good for, and the game seems to recognize that.
The stuff you can do still revolves heavily around mining, farming, building and crafting tech. There's a basic procedural mission system with a small amount progression, for the three races and for three guilds in-game. They added new hostile plant life, and new hostile aliens like the Biological Horrors, Abyssal Horrors and Corrupted Sentinels. You can race with other players in land/water vehicles, and go on multiplayer missions with them. You can collect starships, and you can collect a fleet of NPC-controlled freighter-style ships that you can equip with resources, repair and send out on rare resource-gathering missions while you are doing whatever you feel like doing in your own system.
In the end, the core loop is still
>Get resources/nanites
>Buy blueprints and direct-inject upgrades with the nanites
>Craft the blueprints with the resources
>Use said crafted stuff and upgrades to accomplish certain missions and craft more stuff
>Explore if you can't find all the resources you need on your current planet or in your current system
So if that doesn't sound appealing, don't sweat it, the game just isn't for you.

Staying silent, actually adding features and content with each patch, not charging for dlc/expansion content. I get that people feel burned by the state of the game at launch but the devs seem to be doing good stuff with each update. I bought the game as a DUDE WEED space exploration simulator and it pretty much nailed that from the start so anything extra is gravy.
