FFXI had pretty in-depth fishing mechanics considering it's an MMO from 2002/2003.
Location, bait selection, moon phases, weather, day of the week, time of day and a lot of luck all played a part in whether you would catch something or not and the mini-game was decently challenging.
The only shit part is the rod selection kind of got fucked up. It was a case of needing one of two incredibly difficult to obtain fishing rods to have any sort of chance of catching anything worthwhile.

Eve Online gate camping is probably hands down the best fishing game/mini-game of any game ever.
But instead of fish it's baiting other human players into landing in a stasis bubble on a gate and hoping you can kill them.
It was as comfy as fishing too. Hanging with 1 or 2 cloaked friends, shooting the shit on voice comms, drinking beer. Every 30min or so something would jump in, sometimes they'd get away, sometimes we'd catch trash.
But once in a while you'd get "the big one" and tell stories to your friends for weeks, none of them believing you until you post the killmail.

yeah, terraria is better than any meme game, but the BEST fishing minigame is the stardew valley one
