This shit always pissed me off. I'd get done with a big long night of contract work making animations and save and shut my pc off exhausted. It would turn the fuck back on and I'd have to get my ass up to turn it off again in anger.

It's probably just your network adapter waking up your pc. It's fairly common.
One quick google search should get you the cmd command that tell you what exactly is waking up your computer, and how to disable it from doing so.

How so? A Hard drive has moving mechanical parts, which don't move at all while it's in sleep mode. Is there somthing I've missed?

I don't get it. The fan still spins, but it never changes speed.

Sleep puts the computer into a low-power mode, only maintaining enough power to keep the RAM powered so that it can start back up and retain its data. Writes to the hard drive for sleep are minimal.
You're thinking of hibernate, which writes RAM contents to the hard drive before powering off entirely so it can restore the RAM when starting back up.

That is because you have wakup LAN enabled and a shitty router or your windows power profile is FUBAR.

but i set it to go to sleep automatically after 30min (because i'm too lazy to set it to 5min then change it back every time i have to step outside) and then it just sleeps like a baby and let me sleep like a baby too

I just turn mine off every night, it boots in like 5 seconds thanks to my M.2 NVMe but I am guessing that is not the reason to keep it on?

Why not just put the pc in another room like a normal person? There are ways to connect a pc to a tv with over 50 metres of wire if you must lay in bed and watch porn and use the internet.
