These are all songs that were added before Ultimate. Sakurai has already stated that Ultimate has a more "battle ready" feel to it. He once witnessed a match at a tournament that had the roost playing during the finals. He mentioned that it really took a lot of the excitement out of the experience and wanted to avoid that with this entry.

The anime rights is a tangled web. Look at how Sega disallows any references to the Sonic OVA and Sonic X because of all of the rights involving the companies who made the animes, the music, the original characters, etc. They even told Archie to not put any references to the OVA in the Sonic comic after they had Knuckles' hat appear in an issue (though it didn't extent to other franchises mentioning it, which let Flynn get away with Copy Robot saying "Strange, isn't it?!" to Mega Man in the Worlds Collide crossover).

Stage Builder, video editing, and Shared Content for Joker, Online Tourney, betting on players in Spectate Mode, and expanding the video editing for Hero. I'm only aware of Sakurai commenting on Banjo regarding Melee and Ultimate.
For Melee, he said something to the effect of a lot of people thinking he'd fit the game well, but would be difficult to incorporate (even as a trophy, as was apparently originally planned) due to legal issues I imagine time was also a factor given Melee's incredibly rushed development.
He basically said the same thing in a Famitsu column regarding Ultimate shortly after Banjo's reveal, mentioning that they were especially heavily requested in the West and that they would have been natural inclusions were it not for past legal issues, but they were able to join Ultimate this time since negotiating with Microsoft now is relatively easy (something Phil Spencer verified in his own comments).
As far as I can tell, he hasn't given his thoughts on the Banjo-Kazooie games one way or the other.

If you played the games and watch the trailer, there's so much attention to detail in Banjo-Kazooie's moveset, the stage, and even the music where it's pretty fucking obvious Sakurai, or at least someone high up on Nintendo, cared a lot about the Banjo games.
Like it really says a lot that they got Kirkhope to compose a remix right there. That's never been done before, let alone with a western composer.

If Porky really is going to be a boss, then what the hell happened to Giygus? Or the King Statue? Or any member of the Pigmask Army sans Masked Man? Did the smash team really think Buzz Buzz, Ness’s Dad, and the ASC were more important? I want an answer.
Giygas doesn't have official art or any real sprites they could use besides the Giegue sprite from Mother 1. And yes, all of those characters you mentioned are more important than Pigmask mooks. The King Statue at least has a cameo in New Pork, but Porky has fuck all as of now.

It's insane how many voice clips Metal Face already has in the game despite just being a glorified stage hazard.
I'd love if he actually ended up being playable by the end of Ultimate, but being brought back as a boss would be an alright compromise. Perhaps they could take some design inspiration from his Earthbound fight this time to make it stand out from the fight in Brawl. Besides, Ridley was a boss twice before becoming a fighter, so this wouldn't make it impossible for Porky to be promoted to fighter in the next installment whenever that inevitably happens.

Spirits of Lost Time, Mimics, like a solid 20 Namco characters, Ms. Pac-Man, Ifrit, Ramuh, Odin, Leviathan, Bahamut, Fly Guys, the Starshroom + Toad Crew, Butterfree, Fearow, Magnezone, Electivire, Snorunt, Snover, Drifloon, Hoppip, Whimsicott, Helioptile, Emolga, Magnemite,Axew, Infernape, Tepig, Pyroar, Klinklang, Registeel, Honedge, Wailord, Clawitzer and I'm sure many more I didn't even begin to get to appeared in the game and didn't get spirits
