He really could have done anything with his day, like take out the dog for a walk or go on a date with his gf/wife, but he chose to do this - nobody sane plays video games for 6-8 hours straight, let alone 20.

It's usually the opposite. Speedrunning almost always trivializes the game as they are often skipping the majority of the game's content/challenges, using the cheapest instant win tactics. The only challenge comes from accurate timing on a handful of points while the rest is walking out of bounds and flying to the exit.
Only a select few games ever really stand out as a show of skill, someone expertly clearing a game without literally going around 95% of it.
