It's the same reason why people play online against other humans: beating other humans feels different, and sometimes better, than beating the computer. If you have beaten a difficult game that most other people have given up on or been deterred from playing altogether because of the difficulty, then you have essentially beaten those other people.
Hard forces you to utilize the game mechanics, anything else is journalist tier.
4 or 5 difficulties is best 2nd to last being the appropriate canon difficulty and last being extra difficult or hardcore mode
Difficulty is not the point. Challenge is, an interesting challenge is fun, and oftentimes creates difficult situations. Difficulty for the sake of difficutly creates poor games. But fun and interesting challenges create fun games. Generally, difficulty is an emergent factor of interesting challenge.
What about SMT games where it's "hard" until you abuse the mechanics then it's braindead easy.

higher difficulties are inherently more engaging to skilled players, they're more demanding by default and actually put the mechanics of the game you're playing to the test
a lot of games tend to break under the tension of high difficulty, see a whole fucking lot of ""AAA"" single player games, because they're shittily designed from the core and high level play looks like a fucking joke, or the balance for said harder difficulties in itself is a stupid joke no one has any fun with

Part of the intrinsic value of video games as an entertainment medium is that is interactable. If a game is easy to the point that it provides little challenge, this element is greatly diminished and the experience becomes boring. By the same token, if a game is too challenging, or challenging in a way that is deemed "unfair" by the player, they can similarly feel as though they are not successfully interacting with the medium, and may lose interest. Thus, a balance in difficulty, even if that "balance" is different for each player, is key.

If the gameplay has depth then increasing the difficulty should increase the level of potential enjoyment. If you for example learnt to play chess properly you would rather have equal matchups than to play with retards all the time.
This does not mean that an easy game is bad, but a game with a difficulty setting should, if properly balanced, be most enjoyable on its highest difficulty setting.

No sense of accomplishment in beating an easy game. Though it depends on the type of game and how hard mode is handled more than anything. I wouldn’t expect a life sim like animal crossing to be hard since the point is to relax, but I would expect fire emblem games to pose a challenge without resorting to stat inflation and overpowered enemy exclusive skills since they’re strategy focused.
Because telling an interactive story via input choices like walking around and picking up items, fighting enemies etc. is obviously more interactive than just picking a certain path like in the youtube videos you're talking about.

I recently beat Mega Man 2 on hard, and it honestly felt like a better experience. I had to learn and adapt much more than the ""Normal"" difficulty, which only existed in the USA version anyway. Even Metal Man had 2 times the normal health, which resulted in a much more tense boss fight with a genuine sense of accomplishment. I earned his weapon, which still didn't make the rest of the game trivial like in Normal mode. Fighting bosses with their weaknesses still felt like an actual struggle because just attritioning them to death isn't an option with their higher health. The game was designed in such a way that you must learn their patterns and timings to succeed, with boss weaknesses just being another component of the learning process. I'm going to try buster-only and try not to give up when Woodman repeatedly assrapes me again.

I always play on normal/medium on my first attempt. I think the only exception was that I played Dawn of War 2 and its expansions (particularly retribution) on easy because I just liked going through the game over and over making different choices.
