Pokemon gameplay is actually pretty sweet, there are very few turn based battle systems designed for PvP, and even fewer with as many mechanics in place. I think people don't give Pokemon enough credit for its battle system if anything. However I also get why, as the games primary content basically require little to no understanding of all of it to actually do well.
It's a tough spot, because they can't just "make the game harder" much because it's a kids game, and even if they did, I feel like requiring a good understanding and use of mechanics like weather, terrain etc. from every player would change the appeal a fair bit. Besides that, the majority of turn based games that are considered "hard", like SMT, do so by specifically NOT giving the player as many options. Which is something that can only work in a single player scenario.
Regardless I think calling Pokemon "shit gameplay" when it has a uniquely complex turn based battle system in PvP is a little unfair. There really is very little like it when you actually look past the surface level.
