Yu in the game was a boring blank slate that they were able to flesh out a bit by making him some awkward pseudo-sperg who goes so hard into his secret 'tism that he's able to swing around to being cool.
Joker, unfortunately, oozed personality in the game and in order to force him into the (frankly shit) restructuring they did in the anime, they had to strip him of all his interesting dynamics and just turn him into a more boring Lelouch. The entirety of the P5 anime has less personality than this 30 frame gif.

Yu had a fantastic personality in the anime. They leaned in HARD into the 'funny' choices and memetic swag-master that he became, but they also gave him some anime-original scenes that were great like his fight against Shadow Mitsuo showing his biggest fear was losing all his friends.
He even faces his own Shadow, something I really wish had been in the game but obviously wasn't for self-insert purposes
