I actually get why UNIB is called that, though, but fuck if I know why Melty Blood is called Melty Blood. Blood is obviously because a solid three quarters of the cast is some form of blood sucker, whether it be vampire or demon or whatever the fuck, but what the hell is "Melty"? No one melts in the original VN, no one melts in the original game's VN story mode, and no one melts in any of the arcade modes in the successors. No one melts.

It's an Engrish thing. Japanese developers choose english words for the names of moves, characters, etc. but they don't actually know English all too well so they just end up something that sounds cool to them but is just weird to a native speaker. We would all probably do the same thing trying to make up a title of a game in Japanese too.
I think Melty Blood is a name of one of Arcueid's moves who is one of the main characters in the series.
