It's a complicated question and I honestly couldn't give an answer I wouldn't immediately think of three games I like as much for different reasons. Some games I love are pretty bad games, but excel and provide something unique in one area where other games fall down or haven't even thought to. Some games I've loved to play without really contributing anything new or standing out from others. There's a MUD called Achaea that as a result of playing it lead to some very important personal experiences, but I wouldn't say its my favourite.

Dark Souls 2. Depraved start, no gift, and you get that glorious progression from "nothing from the clothes on your back" to "drakeblood mage-buffed two-handing godslayer". That kind of character progression is exceedingly rare.
Gothic 1/2/Risen are probably the closest that come to that, but while I love almost everything about those games, the ugly character/armour art design with HUGE PAULDRONS makes it hard to stay invested in the character itself.
