It's the two giant open world franchise dev multiplat games, along with the largest two exclusive franchises for each of the consoles, it's a pretty good sample. However you can observe similar trends in the rest of the industry, including them all in one list would be impractical and the "rebuttal" would amount to the same thing "you didn't include all of them". The only series immune from this phenomenon are exceptions like Assassin's Creed.

GTA V is on PC, gen 7 consoles, and gen 8 consoles, but it's still primarily a gen 7 game. Infinite is being designed for Scarlett and downported to the Xbone.
They want to nickle and dime you. Season Pass DLC not on season pass. Cosmetics to buy with IRL money. Lootboxes. List goes on.
There's one year to go and basically nothing was announced, definitely no new GTA, TES VI is confirmed next-gen, TLOU2 is coming, no God of War, GoW 5 is coming, and Halo is already on gen 9. There are no big releases left in gen 8 apart from TLOU2 and GoW 5.
AssCreed has the same structure as COD in that for a while they had multiple teams cranking out that shit, and often like with the Ezio trilogy or everything in the AC3 era from 3, Liberation, Black Flag, Rogue, there wasn't really much meaningful mechanical changes so they could just do rapid turnaround.
You see the same thing in Episodes from Liberty City and that Uncharted Lost Legacy title. The endangered species called the expansion pack, building off existing resources for faster output.
