This might not be exactly what you're looking for because it's a tactical RPG but I have been having a lot of fun with Mario in Rabbids Kingdom on the Switch. I get the same feeling I did when playing Mario RPG Seven Stars for the first time. It also has multiplayer options.
I'm still hoping for a Paper Mario game that doesn't fucking suck after TTYD but we might be waiting for a while.

I was in the same boat as OP, waiting for a decent RPG to come out, I recently got this game and it is pretty fun with RPG elements and turn based features. If somebody suggested it to me I would try it out.

to a lot of people, myself inclided, cant get into rpgs because its so uninvolved, paper mario is one of the tiny few that make rpgs fun for people who are actually good at video games. why do you think fps is more popular in the west and rpgs are more popular in the east

Steven Universe: Save the Light has a battle system similar to Paper Mario games. You can get it on PS4, Xbox One, Switch, Windows & Mac.

Well I would recommend exploring JRPGs more if you haven't because that's what Paper Mario is. A lot of them from the PS1 era are easy to get into. If you're looking for something specifically paper themed then maybe that new Bug Fables, or something specifically Mario themed then just play everything else on here if you haven't already:
