Probably trying to find some new land to conquer, and barely being able to do so, if not at all, since the power of a daedric prince is based on the plain(s) of oblivion they control.

Veil between Oblivion and mundus was unnaturally shattered by the clan Direnni through invention of Conjuration which slowly increased the effect that daedra can have on mortal plane.
Now that mundus is shielded permanently there is no way for jyggalag to get in unless he has cultists or artifacts already in mundus that can spread his influence, which he does not, in addition he doesn't have a plane so he has to forge a new one from some lesser planes in Oblivion.
In the unlikely scenario that a powerful Wizard who can travel the planes, like Divayth Fyr, visits his new plane it would be possible to bring his influence back to mundus through a daedric artifact and possibly a shrine.

Why would you be about to fight any other daedric prince, it is impossible to defeat a prince in his own realm under normal conditions.
Jyggalag was the only time we fought full powered prince, but you are also wearing the mantle of Sheogorath at that point so it balances out.

If you want to see what a fight with daedric prince is like in his realm under normal conditions, hit Sheogorath in SI expansion.

I agree, but this can also be easily explained away by pointing out that Hircine wanted a fair fight to enjoy the challenge, and Mehrunes Dagon is pretty apathetic inside his own realm since no destruction wrought in the Deadlands ever truly sticks (that's part of why he wanted to invade Tamriel so badly), least of all his own.

No it can not be explained away, it is explained in both games.
You do not defeat Mehrunes Dagon, you use his protonymic and neonymic to banish his corporeal form.
With Hircine he literally creates an avatar you yourself pick for you to have a duel with.
That is not the same as fighting a full powered avatar of a Daedric Prince, punch Mehrunes Dagon when he appears at the end of Oblivion or try punching Sheogorath in Shivering Isles, see what happens.

Is there an actual powerlevel hierarchy that we know of? I know a daedric prince gets stronger the more he's venerated, but overall do know if some of them are stronger or weaker?
