I believe there was a Voyager episode about this, where an alien hunter group invaded the ship and equipped literally every part of the ship with holoemitters so they could do hunting simulations with the crew and AIs and stuff. Eventually once crew members started dying Janeway had enough and bum-rushed the different simulations, causing pandemonium as AIs ran around the ship, including Nazis.

The Star fleet command ones: Entirely space battles and a tiny bit of strategy. Play as fucking furries nobody even remembers! Play as Tholians! Run ramshod over fucking Klingons with your leet tactical skills. Pretty dated now compared to literally any other space battle sim in the last 15 years, and very light on star trek beyond "Nice ships"
A final unity: Okay this is a point and click, but it is hardcore full on basically "a 5-episode arc" of TNG. Fully voice acted by the crew (varying levels of efforts, Sirtis clearly didn't understand this was going to be her laughable career later, Frakes is actually pretty fucking good) and a lot of the puzzles are outright solved by "being picard". Fun tip: You can plot a course straight to romulus and claim to three romulan warbirds it was a navigational error. Comes with an absurdly in-depth engineering section that is amazing for its redundancy. Play this one if you basically want a new episode of TNG. Say hi to the shellfish for me.

I just want a "series" type of game with a relatively small core crew of characters and lots of relatively inconsequential encounters, main point being in the crew coming together and developing as characters, along with exploring exotic planets, species and cosmic locales.
No huge galaxy-threatening plots, or if there is one it should take up 2-3 final encounters or "episodes," with a few foreshadowing events along the entirety of the game.

Sometimes I binge watch, but I find a lot of series too long to do that in one go. I also have the problem with that where I end up watching far too late into the night to finish something off.
I do have a problem though if I really like a show with watching the last episode. I'm sure there's a bunch of shows I've not finished properly since watching the last would mean it's done.

If you want to watch something new sure, it's like mcfaglane pitched a scifi comedy but what he really wanted to do is a true star trek like series, so the "jokes" feel like they were added later like "oh shit we were supposed to be doing a comedy, weren't we" in a hurry.
