Gwynn was the most memorable. Isshin is the most overrated, hyped up as hard by people who didn't learn how to play the game properly until the final boss. Not to mention just coming out of no where with no bearing on the plot other than his kid being too much of a pussy and needing him to beat you. Even his stage is just a lesser version of Gerhman's. Soul of Cinder was the most forgettable. Gehrman was probably the best overall.
Isshin is underrated.
Isshin. Most fun I had playing a game in a long time. I actually felt like I accomplished something when I finally won. No cheese or resurrections and only healed once.
Isshin is still hard even if you knew how to play the game properly.

Whoa, it’s almost as if he learned his patterns and figures out what to do. I was destroying Isshin’s first phase in seconds after learning him, but he’s still a hard boss. Second phase was honestly he biggest problem.
I don't even understand why Sekiro is lumped in with the Souls series to begin with. The design intent of the game is so different it'd be like comparing Monster Hunter to DMC.
