I'm a quarter jp but I live in the US and don't really consider myself japanese
but the real answer you don't see asian people that look like this in games is that it requires a completely different skillset when modeling asian characters' faces. There aren't a lot of people who know exactly how to make the "asian" phenotype (probably because there's actually a huge range of asian faces despite the memes) and creating different characters based off of this is even harder. Add to that system and artstyle constraints and the best most developers can do is make their eyes slits or give them a filipino nose.
