Going from dump stat to use this or die is the most hamfisted game design imaginable. It sounds simple enough; however, it's all about dodging and parrying. The player moves towards enemies and makes their life hell for them by parrying or striking them with devastating blows. The game is all about balance in a way the genre of games as a whole has never been before, and it is an immensely fun experience that makes the player as happy as possible.

I'm not going to elaborate on the combat because that would be boring. Suffice it to say it's fun to watch when your character gets hit by a single hit. It's also a good idea to always have at least one character available for every boss in the game; having the entire party of eight available doesn't change this fact that the game sucks.

Fromsoft games are not difficult at all, you only need to learn the basic mechanics and learn patience and every single game you can complete in less than 10 deaths each.
All you need is to have a light character, dodgeroll out of every telegraphed attack, R1 couple of times, rinse and repeat. Many people become impatient when fighting bosses and when the health of a boss nears the end, people get too hasty and try to get in more hits than they should and they end up being punished for this. Against every opponent you can just keep your distance, see their attacks and animations and learn when to dodge. The games are designed around the dodge mechanic, you won't have a moment where you perfectly dodge roll out of an attack only to be hit by an attack that you can't get out of with a second dodge roll, unless you're wearing increadibly heavy armor, in which case you should be using a shield. The only time you need to be careful is when facing more than 3 enemies at once, since it's easy to get piled on and become stunlocked.
