Start with 1 if you aren't an absolute pussyfaggot. Half of the fun of getting into Touhou is seeing how the games evolves over time. Also, Highly Responsive to Prayers is absolute SOUL and has amazing atmosphere.
Just finish them one by one on normal with shit ending and then pick the ones you'd like to go full autismo with.
