WotC adds so much amazing shit that its almost another game entirely.
The Chosen are just a handful of what they add, the real big thing is the 3 new classes in addition to the training center which is just epic.
All in all, playing XCOM 2 vanilla just preps you to get anally raped by WotC.
The only thing I hate about XCOM 2 is the fact that every game starts the same. You have a guaranteed week (7 days) where nothing happens, then a mission with a guaranteed engineer, followed by a mission from one of the factions, usually with LOST or HORDE modifiers, then a retaliation mission right afterwards.
It just gets pretty dull and a new game doesn't really "start" until about the 5th mission in or so.
