Because you can play them on day one with no issues and they can't. You're paying for the luxury and simplicity of having a cartridge shipped to you to just pop into your Switch and play without fail. They need to wait for an emulator to be developed, then download a rom of a game, and then hope there are no problems with getting it to work, or if there are, troubleshoot those problems or wait for a patch or mod.

First, you don't have to pay. You can emulate too.
Second, Switch emulation, right now, is unambiguously worse than the first-party experience. Framerate and glitches aside, you can't use any online features via emulation yet.

Emulation is not as much a threat to current gen console games as hacked consoles that allows pirates to play the games day 1 or even much sooner. If you don't understand that you're just angry at nothing. Emulation is better in the long run to preserve games and this has been proves many, many times with all the games that can now only be played through emulation because companies simply refuse to give us legit options to buy and play their games. Yes, the majority of emulator users are pirates, but some of us are dumping their own owned games which is completely legal in a lot of countries or at worst in a grey area in others.
In Japan emulation is completely illegal for the end user. You know what would help preservation? Source code releases.
