A few games have done this. Most just take you to a new UI window though. Its easier to design around. You don't need to worry about the screen resolution being too low to see readable elements on the computer etc.

I think the earliest game I saw do this was Noctis IV. It was a sorta space exploration game that was cool for it's time. Kinda like no man's sky with even less to do.

Old prey did it too, but it used the same engine as Doom 3.

So this is the real answer, consoles ruin yet another thing for us.

Interacting with an in-world screen by looking at it with analog sticks isn't any worse than aiming with analog sticks. It's still way more immersive the way Doom 3 did it.
