If we're taking the entirety of Mario's universe, coins aren't really anything to talk of. The Beanbean Kingdom's coins are worth a lot more and the gold coins Wario collects are probably of higher quality.

MK coins' buying power is pretty consistent though and the quality of life is pretty high. For all we know the bizarre fluctuations in currency between Mushroom Kingdom and Beanbean are probably just a bizarre side effect of Peach being kidnapped again.
It's not like you see any actual shortages of stuff like food or other necessities.

Good point. It makes you wonder if there are other currencies like that other user mentioned. Stars could be a good contender and red and blue coins are worth more. Toads can probably grow mushrooms easily and they can be cooked in various ways and some get really big. I'm interested in seeing a Mario game where they go into depth with the Mushroom Kingdom's economy.

this. it's common for a society to switch to commodity money in times of high inflation. the fiat currency of coins is basically useless during wartime. power stars and moons have higher utility which is why bowser always attempts to gain full control over the country's supply of them whenever he attempts a hostile takeover. my theory is that during times of peace and prosperity, coins have more value and security, but once bowser kidnaps peach, the government of the mushroom kingdom basically collapses and there is no financial infrastructure in place to redeem people's currency, leading to high inflation and the switch to commodity currency.

I wonder if, after the monarchy of Princess Peach's dynasty has proven incompetent (even in matters of simple security, but economic instability, labor, social issues, etc) time and time again, if the people of the Mushroom Kingdom had ever considered ending the monarchy and installing a democratic-based system of governance? A Mushroom Republic, if you will.
Imagine the prosperity that would come to all the different regions in the Mushroom Kingdom now! Toad Town, New Donk, Glitzville, etc as booming centers of culture and trade. The working class ice and jungle communities that have been neglected for far too long. Those on the fringes of society, like the Goombas and Koopas (historically segregated and stereotyped, might I had, by the monarchy!) finally getting a say in the government. It would change everything.
Even if they didn't want to elect a president, at least give the Mushroom Kingdom a parliament to make decisions and keep Peach as a figurehead with no real powers. It's time.
